BASIL PEA SOUP

INGREDIENTS:

 

- 1 BAG OF ORGANIC FROZEN PEAS

- 1 LARGE ZUCCHINI, SLICED

- 1 CUP FRESH BASIL

- 1 TBSP FENNEL SEED

- 2 TSP FENUGREEK, GROUND

- 2 TSP CORIANDER, GROUND

- 1 TSP TURMERIC, GROUND

- 1 TSP CARDAMON, GROUND

- GHEE OR GRAPESEED OIL

- 4 CUPS VEGETABLE STOCK

- 1 5OZ CAN COCONUT CREAM

-  1/3 CUP COCONUT MILK

-  JUICE FROM 2 LIMES

- ALMONDS FOR GARNISH

 

DIRECTIONS:

1. SAUTE ZUCCHINI AND PEAS IN OIL OR GHEE.  ADD SPICES. LET COOK, STIRRING OCCASIONALLY. 

2. STIR IN LIQUIDS, LET COOK FOR 15 MINUTES.

3. LET SIMMER AND ADD COCONUT CREAM AND LIME JUICE.

4. COOK FOR ANOTHER 10 MINUTES.  REMOVE FROM HEAT AND BLEND WITH IMMERSION BLENDER UNTIL SMOOTH.

5. TOP WITH PEPPER, BASIL, AND ALMONDS.
