- 1 CARTON BLACK MISSION FIGS, STEMS REMOVED AND CUT INTO BITE SIZE PIECES
- 4 CUPS BABY ARUGULA, WASHED AND DRIED
- 1 TSP GHEE OR GRAPESEED OIL
FOR THE VINAIGRETTE
- 1 TBSP BALSALMIC VINEGAR
- 1 TBSP OLIVE OIL
- 1 TSP DJION OR SIMILAR MUSTARD
- 1 TBSP 100% PURE MAPLE SYRUP
DIRECTIONS:
1. PREHEAT OVEN TO 425 DEGREES F
2. PLACE FIGS ON BAKING SHEET WITH GHEE OR GRAPESEED OIL, ROAST FOR 10-15 MINUTES
3. WHISK TOGETHER LIQUID INGREDIENTS AND DRESS ARUGULA UNTIL LIGHTLY COATED
4. PLACE ARUGULA IN BOWL AND TOP WITH ROASTED FIGS AND MICROGREENS
