FENNEL APPLE AND RADISH SALAD

INGREDIENTS:
- 1 MEDIUM TO LARGE FENNEL BULB, DICED (SAVE STALK AND SET ASIDE)
- 4 APPLES, DICED
- 2 GRAPEFRUITS, PEELED AND SEPARATED
- 4 SCALLIONS, CHOPPED
- 6 PINK RADISHES, SLICED
- JUICE FROM 3 LEMONS
DIRECTIONS:
1. Combine ingredients in a large bowl.
2. Add lemon juice and juice from grapefruits.
3. Refrigerate for 1-2 hours
4. Serve and garnish with chopped fennel stalk.
