KOHLRABI RADISH AND BROCCOLI TOFU BOWL

INGREDIENTS:
- 1 CUP UNCOOKED BLACK WILD RICE (MAKES 3 CUPS COOKED)
- 1 BLOCK OF FIRM TOFU, DICED
- 1 HEAD BROCCOLI, CUT INTO FLORETS
- 1 KOHLRABI, PEELED AND SLICED INTO 1/8" PIECES (REFER TO PHOTO)
- 1 TBSP MIRIN
- 1 TBSP TAMARI SOY SAUCE
- 1 TBSP MAPLE SYRUP
- 1 TBSP TOASTED SESAME OIL
DIRECTIONS:
1. COOK RICE ACCORDING TO DIRECTIONS ON BAG (I GOT MY RICE COOKER AT A THRIFT STORE FOR $7, ONE OF THE BEST KITCHEN PURCHASES I HAVE EVER MADE)
2. WHILE RICE IS COOKING, HEAT SKILLET WITH 1 TBSP TOASTED SESAME OIL, ADD DICED TOFU. LET BROWN FOR 5 MINUTES AND FLIP. COOK UNTIL EVENLY BROWNED. REMOVE FROM SKILLET AND LET OIL DRAIN ON PAPER TOWEL.
3. IN THE SAME SKILLET, ADD 2 TBSP WATER AND BROCCOLI. LET COOK/STEAM FOR 5-7 MINUTES.
4. ADD MIRIN AND SOY SAUCE, LET COOK FOR ANOTHER MINUTE. REMOVE FROM HEAT.
5. WHEN RICE IS FINISHED LAYER BOWL WITH RICE, BROCCOLI AND TOFU. DRIZZLE REMAINING LIQUID FROM SKILLET.
6. DIVIDE KOHLRABI AMONGST PLATES.
7. TOP WITH A DRIZZLE OF MAPLE SYRUP AND SERVE WHILE HOT.
