DANDELION GREENS SPRING PEA SALAD

INGREDIENTS:
- 1 BUNCH DANDELION GREENS, CHOPPED
- 1 CUP KALE, CHOPPED
- 1 BAG OF FROZEN PEAS, OR FRESH PEAS (SOMETIMES FOUND AT TRADER JOES)
- 1/2 CUP RED ONION, DICED
- 9 SPRGS OF DILL, CHOPPED
- JUICE FROM 1 LEMON
- 1 TBSP MIRIN (A SWEET JAPANESE COOKING WINE, NO BIG DEAL IF YOU DON'T HAVE THIS, I JUST LIKE THE ADDED FLAVOR)
- 1 TBSP MAPLE SYRUP
- 2 TBSP OIL OR VEGGIE BROTH
DIRECTIONS:
1. BLANCHE PEAS (ONLY IF FROZEN)
2. SAUTE GREENS, KALE, AND PEAS IN OIL OR VEGGIE BROTH (I PREFER VEGGIE BROTH AS A HEALTHIER ALTERNATIVE) UNTIL TENDER. ADD HALF OF CHOPPED DILL. ADD LEMON JUICE AND MIRIN.
3. REMOVE GREENS FROM HEAT, AND DIVIDE IN SERVING BOWLS.
4. GARNISH WITH DILL, RED ONION, AND GOAT CHEESE. DRIZZLE WITH MAPLE SYRUP.
